cheap 'n' easy vegan cooking

SCOUSE... vegan scran

6 large potatoes (diced)
3 medium carrots (chopped)
1 medium onion (chopped into thin rings)
approx. 100g dried soya mince (hydrated) or 150g frozen soya mince
1 tsp yeast extract, mixed herbs, salt and pepper to taste
vegan margarine
just over a pint of vegetable stock

1.) Melt marge in a large pan and saute the vegetables for 10 mins.
2.) Add the other ingredients, bring to the boil, then simmer for 15 mins, or longer if preferred. You may need to top up the water.

Serve with bread. Stir in tomato sauce or a splash of vinegar if you like.
