8 shop bought or home made vegan sausages
2 medium sweet potatoes (peeled)
4 dried prunes (finely chopped) or 50g raisins
4 shallots (or one red onion, if you can't get shallots)
1 pint vegetable stock
1/2 tin chopped tomatoes
generous squirt of tomato puree
generous splash of red wine
2 tsp. sugar
generous amount of mixed herbs, salt and pepper to own taste
3 tbsp vegetable oil or olive oil1.) Grill the sausages until about half cooked (about 5 or 6 mins) and pre-heat the oven to gas mark 6, 200 C.
2.) Meanwhile, dice the sweet potatoes and finely chop the shallots. Lightly fry in the oil in a pan for 5 minutes.
3.) Chop sausages into quarters and place into an oven-proof dish. Top with the shallots, then the prunes and tinned tomatoes.
4.) Stir the wine, sugar, herbs, salt, pepper and tomato puree into the stock, then pour over the top. Bake for 30 mins.

VEGAN MUST TRY.
Serve with potatoes and the rest of the wine. Makes 3 big portions or 4 normal ones. This is a bit richer and more expensive than the other recipes in this book, but don't forget, even toffs like to scoff!
