Ye Olde TeA shoPpe FruiT CaKE

4oz raisins
2oz sultanas
2oz cherries
2oz dates, figs or apricots
2 medium bananas (mashed with fork)
2tbsp lemon juice or vinegar
10oz self raising flour (wholemeal or white)
1tsp ginger
1tbsp cinnamon or mixed spices
5 fluid oz. vegetable oil
2tbsp treacle, malt extract or molasses
2 tea bags

1.) Place first six ingredients in a large bowl.
2.) Add tea bags and approx 7 fluid oz boiling water. Stir, then leave to stand until it cools to room temperature. Remove tea bags.
3.) Add all the other ingredients to bowl and stir until thoroughly mixed.
4.) Pour into a large greased cake tin and bake in a pre-heated oven at gas mark 5 (180 C) for 45 mins. Reduce heat to gas mk 3 and bake for a further 15 mins, then check cake. When it shrinks away from sides of the tin and a knife pushed into it comes out clean, it is ready.
5.) Leave to cool in the tin. Add a splash of brandy if you like.

RoNNy SaYs
This cake doesn't rise much. It is best served thickly sliced and spread with margarine, but you can ice it if you prefer. The quantities of fruit suggested are approximate. Any dried fruit can be used, as long as the amounts of fruit and flour are roughly equal.
