'n' easy vegan cooking
Eggy bread (or French Toast if you are posh)
4 slices of white bread
Approx. 3 heaped tbsp gram flour
Approx. 1/2 pint soya milk
Pinch of salt
Vegetable oil or margarine
l.) Sieve flour into jug or bowl. Add salt.
2.) Add a little soya milk and mix into a paste.
3.) Add rest of soya milk. Whisk with fork or mixer. Test consistency with a spoon. Batter should coat the back evenly.
4.) Dip each slice of bread into batter, then allow to drip for a moment.
5.) Fry gently in veg oil or marg on each side until brown.
Serve with fry-up or as a sweet snack with sugar and lemon juice.
